2 cups citrus juice (orange, lemon, grapefruit)
1 cup water
1 cup sugar
2 tsp Cape Crystal Brands agar-agar powder
Zest from 1 citrus fruit
Fresh mint leaves for garnish
STEP 1: In a saucepan, combine citrus juice, water, and sugar. Heat over medium until sugar dissolves completely.
STEP 2: Sprinkle agar-agar powder evenly over the liquid and whisk to incorporate. Bring the mixture to a gentle boil, stirring occasionally.
STEP 3: Reduce the heat and let the mixture simmer for 5-7 minutes, ensuring the agar-agar is fully dissolved.
STEP 4: Remove from heat and stir in the citrus zest, allowing the flavors to infuse for a few minutes.
STEP 5: Pour the mixture into individual serving glasses or molds. Let it cool at room temperature for about 20 minutes.
STEP 6: Refrigerate the desets for at least 2 hours, or until they are set and have a delicate jiggle
STEP 7: Garnish with fresh mint leaves just before serving.
