This Mango and Coconut Panna Cotta recipe is a showcase of Agar Agar's incredible ability to create dishes that are as delightful to the palate as they are to the eye. Ingredients:

  • For the Mango Layer:

    • 1 cup mango puree (from about 2 ripe mangos)
    • 1/4 cup sugar (adjust based on the sweetness of the mangos)
    • 1 teaspoon Agar Agar powder
  • For the Coconut Layer:

    • 1 cup coconut milk
    • 1/4 cup sugar
    • 1 teaspoon Agar Agar powder
    • 1/2 teaspoon vanilla extract (optional)

Instructions:

  1. Prepare the Mango Layer:

    • In a small saucepan, combine the mango puree, sugar, and Agar Agar powder. Whisk until well combined.
    • Bring the mixture to a boil over medium heat, stirring constantly to prevent lumps. Once boiling, reduce the heat and simmer for 1-2 minutes, until the Agar Agar is fully dissolved.
    • Remove from heat and let it cool for a few minutes. Then, pour the mixture into your serving glasses, filling them about halfway. Tilt the glasses slightly in the fridge to set at an angle for a more dramatic presentation. Allow to set in the refrigerator for at least 30 minutes.
  2. Prepare the Coconut Layer:

    • In another saucepan, mix the coconut milk, sugar, Agar Agar powder, and vanilla extract. Whisk to combine.
    • Heat the mixture until it comes to a boil, then simmer for 1-2 minutes, stirring continuously.
    • Let the coconut mixture cool slightly. Once the mango layer is set, pour the coconut mixture over it to fill the glasses.
  3. Set and Serve:

    • Allow the panna cotta to set in the refrigerator for at least 2 hours, or until firm.
    • Serve chilled. Garnish with diced mango or toasted coconut flakes for an extra touch of elegance.
