1/2 cup macadamia nuts
1 1/2 cups water
1/2 tsp. vanilla extract
1 pitted Mool date
1/4 cup 100% pure apple juice
A pinch less of 1 tsp. Cape Crystal agar agar powder
STEP 1: Toss date and nuts in food processor and blend until smooth. I told you it was easy.
STEP 2: After blending, pass through a sieve to remove unprocessed pieces.
STEP 3: Place 3/4 blended macadamia nuts and date, 1/2 cup water, vanilla extract, apple juice, agar agar powder in a pot over medium heat and bring to a boil. Simmer for 2 minutes, continuously stirring. Then remove from heat and let sit for 5 minutes
STEP 4: Pour into ramekins or serving cups and refrigerate to allow setting. Garnish with macadamia nuts, and a mint leaf.
