1 tsp. yeast
2/3 cup milk
2 eggs
4 tbs. oil
3/4 tsp. vanilla
1/4 cup sugar
1/2 tsp. salt
3/4 tsp. Cape Crystal guar gum
1 2/3 cups gluten-free fl our mix
STEP 1: Heat milk to about 105ΒΊF.
STEP 2: Sprinkle yeast into the warm milk, and stir it to soften. Set aside.
STEP 3: Beat eggs with a fork in a large bowl. Add oil, vanilla, and sugar.
STEP 4: Mix remaining ingredients together in a separate bowl.
STEP 5: Add the yeast and milk that you mixed together in Step 1, into the egg/oil/sugar mix.
STEP 6: Add flour ingredients, and mix well.
STEP 7: Cover with plastic wrap and let rise for at least an hour
STEP 8: Heat waffl e iron, and cook waffl es as you normally would without stirring the leavened batter down. Enjoy!
