1/2 cup sugar
1 1//2 oz. of water
1/4 tsp. Cape Crystal citric acid
1 tsp. butter
3 1/2 oz. heavy cream
STEP 1: In a pot with a thick base, heat the sugar, citric acid and water until an amber color of caramel is obtained.
STEP 2: Remove from heat and add heavy cream and butter while whisking to deglaze the caramel.
STEP 3: Let cool. Pour into a serving pitcher. Spoon or pour over your favorite dessert.
