1/2 cup pure fruit juice
1/2 tbs. Cape Crystal agar agar powder
1-2 tbs. honey or agave syrup (optional for additional sweetness; use agave syrup if trying to keep completely vegan)
STEP 1: In a small saucepan, add agar agar powder into juice and whisk until completely dissolved. Bring mixture to a simmer and whisk again. Allow mixture to simmer for about 5 minutes or until the consistency is thickened and syrup-like (but not quite as thick as honey)
STEP 2: Whisk occasionally while the mixture is simmering so that none of the mixture overcooks on the bottom or sides of the saucepan. Once the mixture is done, you can add honey if needed. Some juices are not as sweet, and adding the agar agar powder further dilutes the sweetness. If using honey, stir in until dissolved.
STEP 3: Keep the saucepan on the stove (so that it doesn’t cool too quickly), but turn off the heat. Pop any air bubbles.
STEP 4: Pour into molds, or on a plastic-wrap-lined baking sheet, if you don’t have a mold.
STEP 5: Place into refrigerator until firm (about 10- 15 minutes). Keep fruit snacks stored in the refrigerator until ready to eat.

I am sorry to learn of your health issue. I realize with that syndrome you must avoid all mamalian meats and byproducts. So here is a special gummy recipe just for you:
Ingredients:
THC-infused coconut oil (amount depends on desired potency)
½ cup fruit juice or puree (flavor of your choice)
2 tablespoons honey or agave syrup (use agave for vegan option)
2 tablespoons agar-agar powder (not flakes, as the powder has a stronger gelling property)
Optional: Food coloring
Instructions:
Prepare the Mold: Lightly grease a silicone gummy mold with a non-stick spray.
Combine Juice, Sweetener, and Agar-Agar: In a saucepan, mix the fruit juice and honey/agave. Sprinkle the agar-agar powder over the mixture and let it sit for a few minutes.
Heat the Mixture: Turn on the heat to medium and warm the mixture. Stir constantly until the agar-agar completely dissolves. It’s important to bring the mixture to a boil as agar-agar needs to boil for a few minutes to activate its gelling properties.
Add THC-Infused Coconut Oil: Remove the saucepan from heat. Stir in your THC-infused coconut oil evenly. The amount of oil will depend on the desired potency of your gummies.
Pour into Mold: Quickly pour the mixture into your mold. Agar-agar sets more rapidly than gelatin, so work swiftly.
Set at Room Temperature: Allow the gummies to set at room temperature. Agar-agar sets without refrigeration, which should take about 30 to 60 minutes.
Remove Gummies and Store: Once set, pop the gummies out of the mold. Store them in an airtight container. They can be stored at room temperature but will last longer in the refrigerator.

Notes:
Texture Difference: Agar-agar creates a firmer gummy than gelatin. If you prefer a softer texture, you can experiment with reducing the amount of agar-agar.

how can I incorporate my THC infused coconut oil into this recipe. I really miss my gummies but I have alpha Gal Syndrome and cannot use the simple jello recipe to make them. Any tips in substitutions would be greatly appreciated.
